Tools for Success: Beyond Price: A Practical Guide to Creating Menu Profitability

As Director of Research and Consumer Analytics, Francois oversees Revenue Management Solutions (RMS)’ consumer research and industry trends, serving up valuable insights to build profitability for top-ranking restaurant and retail brands. He leads the effort to gather and publish quarterly consumer research informing restaurants and other retailers on buyer intentions, attitudes, sentiment and more. Francois and his team also syndicate RMS’ monthly QSR trend reports, which include sales, traffic and spend figures, and have been cited in numerous national and trade publications including Forbes, The Wall Street Journal, Nation’s Restaurant News, QSR, Modern Restaurant Management and many more.

Francois is also responsible for RMS’ choice modeling discipline, which uses analytics to help clients make pricing decisions in the absence of point-of-sale (POS) data. This specialty has assisted numerous restaurant leaders with new product rollouts, price benchmarking against competitors and menu engineering.

In 2019, RMS partnered with the Center for Marketing and Sales Innovation (CMSI) at University of South Florida Muma College of Business for a study using state-of-the-art eye-tracking technology to inform restaurants on how consumers read menus. Today, Francois leads the RMS team that is furthering that research to include how consumers read and use online menus and ordering platforms.

Francois moved to the US from France on a golf scholarship. He earned a Bachelor of Science degree in finance from the University of Tampa and a master’s degree in economics and finance from Brandeis International Business School. He joined RMS in 2014 as an Analyst on the operations side with numerous North American and European QSR and casual dining restaurant clients. Francois, his wife and dog now live in NYC.
